about 4 c washed spinach leaves
1/2 c artichoke hearts, drained
3/4 c ricotta cheese
1/4 c cream cheese
1/2-3/4 c shredded parmesan cheese
1.5 TBSP fresh lemon juice
1 tsp onion flakes
1 tsp garlic powder
seasoning salt or salt & pepper to taste
dash of red pepper flakes
16oz campanelle pasta (or any other kind you like)
Throw spinach into the boiling pasta water. Let sit 3 min. Pull spinach out and place in blender. Add pasta to water, cook for 10 min. Throw everything else into the blender w/ the spinach & blenderize. Drain pasta, combine w/ spinach mixture. Put in 8x10" casserole dish and bake for 30 min.
